starting bodywork restoration

Hi everyone i am new to this forum, i have just got hold of a 1961 Dexta and am about to restore the bodywork, i would welcome any tips or advice from you guys as i have very little experience but a great interest in vintage tractors. I only use the Dexta for a couple of months a year to bring home the turf here in Ireland so i have time to get it right. I guess i need to know how far to strip the Dexta back so that i can spray it and any advice on sanding painting etc.... This is a great forum already found loads of answers and advice Thanks
