Hi mate, my diesel major had the same problem as yours. Honestly the only way to tell whether its head gasket, or cracked, or pourous liners is to take the head off. I couldnt see anything wrong when i took the head off mine so I took the pistons out and found the liners had cracked, and rusted through at the bottom. You should be able to see down through the bores to where it is.
How much water is going into the oil? when the liners go, it usually goes fairly rapidly into the oil, and the level rises quite a bit.
Oh yay, look, another seized bolt! Lets get a hammer.....and some kano.....and some cider!

After about 3 weeks just running at weekends the oil level was 4 times past the full mark so it's going in fast lol

Sounds like a liner problem, or a crack somewhere. Your best bet is a tear down. Dandy Dave!
